Woven Seafood and Chophouse Executive Chef Dexter Mina brought his cooking out of the restaurant and onto the stage at one of Pierce County’s largest venues with a live cooking demonstration at the Tacoma Dome.

Mina prepared corn chowder with garnished feta salmon crostini during the hour-long event on Jan. 30 at the Tacoma Home and Garden Show. The audience lined up following the demo to taste samples of what was prepared.

Mina has worked as the executive chef at Woven Seafood & Chophouse since it opened in 2024 on Ruston Way. Mina grew up in Hawaii and said he has worked as an executive chef for the past five years.

“For me to cook what we do best here at Woven and show that off to the community, I think it’s a great way to show what Woven is all about,” Mina said. “The whole concept behind Woven is giving back to the community and making sure we take care of people.”

Mina said the restaurant typically sells around 20-30 corn chowders a day during the winter soup season. He explained the details of the recipe to the audience while cooking.

“I like to teach people about my style of cooking, where I come from and chauffeuring it on our menu. That is what I like doing the most as an executive chef,” Mina said.
